Dough 1 3/4 cup warm water
2 Tbsp yeast
5 Tbsp sugar
1 tsp salt
1/3 cup butter
1/3 cup shortening
4 2/3 cup bread flour
1/2 cup mashed potato flakes
2 pcs eggs
Topping
15 grams standard potato flakes
Filling
340 grams 1 can condensed milk
How to Prepare Potato Dulce de Leche
Directions for the dough:
1. dissolve yeast in warm water.
2. add the rest of the ingredients and knead until smooth and elastic
3. proof the dough for 1 to 1 ½ hours until double in bulk.
4. punch down and shape into 30 gram portions.
5. Flatten each portion into a round shape disc and fill with the dulce de leche filling.
6. Roll each one into a ball and place in a baking pan. Proof again until double in bulk.
7. Brush with light eggwash and sprinkle Potato Flakes.
7. Bake at 375f for 20 to 25 minutes.
Directions for the filling:
1. Place one unopened can of condensed milk in a saucepan.
2. Fill the saucepan with enough water to cover the can. Simmer for 2 1/2 to 3 hours.
3. Let cool and refrigerate.
